
At our last Cornell's happy Hour, Franca, one of our newest team members, blessed us with her famous stuffed mushroom cups. Needless to say, they were gone in minutes. She decided to share her recipe with everyone for the New Year. If you're having a NYE get-together, this is what to bring!
Franca's Mushroom Cups
Yield: 4 to 4.5 dozen
Preheat oven to 350 degrees
Filling
3 tbsp minced green onions
4 tbsp melted butter
1/2 lb minced mushrooms
2 tbsp flour
1 c heavy cream
1/2 tsp salt
1/8 tsp cayenne pepper
2 tsp parsley
2 tbsp chives
2 tbsp water
2 tbsp lemon juice
Croustades
1 loaf firm, square bread, sliced
1/4 c butter, melted
Croustades
1. Trim crusts from bread slices
2. With rolling pin, flatten each bread slice and cut into 4 squares
3. Using small size muffin tin, place 1/2 tsp melted butter into each muffin cup
4. Gently push each bread square into muffin cups
5. Bake croustades for 8-10 mins at 350 degrees until browned
6. Fill with mushroom filling
Filling
1. Saute green onions in butter
2. Add minced mushrooms and cook for 10-15 mins, or until moisture is gone
3. Remove from heat and add flour, stirring until well blended
4. Add heavy cream, bring to boil, and simmer for 2 mins
5. Remove from heat. Add salt, cayenne pepper, parsley, chives, soaked in 2 tbsp water, and lemon juice. Mix well and cool.
6. Using a long-handled small spoon, fill the baked croustade cups (Can be frozen at this stage)
7. Bake at 350 degrees for 10 mins (12-15 if frozen)
